This is a historic butcher store founded in 1903, located on the Fujieda-juku shopping street on the old Tokaido Highway. 120 years have passed since its establishment, and the current representative, Naoki Muramatsu, is the fifth generation.
All the meat in the store is domestically produced. The meat on the shelves of the store is all domestically produced, and they mainly purchase meat from Kagoshima and Miyazaki in Kyushu. He is not particular about brands, but only purchases the best meat at the time. By doing so, they are able to deliver consistently good meat at a fair price to their customers.
In addition to meat, the store also sells side dishes (croquettes and salads) and vegetables, making it an important shopping place for the community.
They can prepare any meat you want in advance, and even if it is not available in the store, there are items that can be prepared right away.

Restaurant “Taishotei
A large brick-style building standing behind the butcher store is the Taishotei, a restaurant serving meat dishes.
The building was rebuilt about 10 years ago, so it is very clean both inside and out.
In the Taisho era (1912-1926), the restaurant moved to its current location and opened a butcher store, and at the same time, started a restaurant. Before that, the restaurant was located in Mizukami, Fujieda City, and was called “Muramatsu.

Looking around, it seemed that the jumbo pork cutlet set meal, loin cutlet set meal, and pork cutlet bowl were frequently ordered.
This time, I had the jumbo pork cutlet set meal.
As the name “jumbo” suggests, it is very thick and has a good balance of fatty meat.
The batter is crispy and the meat is soft despite its thickness, so you can bite through it without difficulty. The special sauce and the flavor of the meat intertwine in the mouth, and the good quality fatty meat soaks into the mouth, leaving a light and refreshing aftertaste.
The large cutlet filled my stomach to the brim, but my hands did not stop and I finished the dish.
Next time, I would like to try the wagyu steak and sukiyaki, although they are a bit more expensive. By the way, sukiyaki is made in Kanto style with warishita sauce.
The skill of a butcher
In the old days, they used to butcher a whole cow. Even today, they still buy a whole cow at certain times of the year, but it is already disassembled and made into a block of meat.
The meat is then cut into pieces at the restaurant. This also seems to be a show of skill.
The inside of the mouth is very delicate, so even a single cotton dust can be detected. So, as a basic rule, they cut the meat at a right angle with the muscle pulled tight. In addition to that, they make sure it looks nice. President Muramatsu also told me that he cuts the meat neatly while thinking about how to use all the usable parts so that there is no loss.
The structure of all cows is the same, but each cow has its own unique habits. He said that while keeping the basics in mind, it also takes experience to deal with these differences.
He was taught the basics by his sons, but then he let him try more and more because he had to try it himself to learn.
Currently, the eldest son and President Muramatsu’s wife lead the cooking store, and the second son leads the butcher store. President Muramatsu says that he rarely holds a knife in his daily life.
